French Apple Cider Chicken

French apple cider chicken braises bone-in, skin-on thighs until tender, then finishes in a glossy apple cider-cream sauce. The method builds flavor with golden searing, caramelized apples and shallots, and a thyme-garlic aroma.

Ingredients
  

Chicken thighs
  • 6 bone-in skin-on chicken thighs Season well with salt and pepper.
Fruits and aromatics
  • 2 apples, cored and sliced Slice into wedges or thin slices for even caramelization.
  • 3 shallots, thinly sliced
  • 4 cloves garlic, minced
Cider and dairy
  • 1 cup hard apple cider or fresh apple cider
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tbsp butter Use for searing and building sauce richness.
Seasonings
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme Tie or bruise lightly for a stronger aroma.
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • 0.25 Salt and pepper to taste Use to season the chicken and finish the sauce.

Method
 

Sear the chicken
  1. Season the chicken thighs well. Heat olive oil and 2 tbsp butter in a Dutch oven over medium-high heat and sear skin-side down 6-8 minutes until golden, then flip and cook 3 minutes more until browned.
  2. Remove the chicken from the Dutch oven and set aside while you caramelize the fruit and aromatics.
Caramelize apples and build the base
  1. Add the shallots and apple slices to the Dutch oven and sauté 4-5 minutes over medium-high heat until golden.
  2. Add garlic, fresh thyme, and dried rosemary, then cook 1 minute until fragrant.
Simmer in apple cider
  1. Deglaze with the apple cider and cook 2 minutes, scraping up the browned bits from the bottom of the pan.
  2. Add chicken broth and Dijon mustard, stirring until combined.
  3. Return the chicken skin-side up to the sauce, cover, and simmer 20 minutes until the chicken is cooked through.
Finish the sauce
  1. Stir in the heavy cream and simmer 5 minutes until the sauce looks glossy.
  2. Season with salt and pepper to taste, then serve hot with the cider-cream sauce and caramelized apples.

Notes

For best browning, pat the chicken dry before seasoning and sear without moving it until the skin turns deeply golden. Store leftovers covered in the refrigerator up to 3 days; reheat gently in a covered pot over low heat until warmed through. Freezing is not recommended because the cream sauce can split after thawing. For a lighter option, use half-and-half instead of heavy cream for a thinner, less rich sauce.
