Method
 

Season and build the curry
  1. Season the beef chuck roast generously with salt and pepper so it cooks up flavorful throughout. Use an even coating over the entire surface.
  2. Whisk coconut milk, diced tomatoes, red curry paste, garlic, ginger, fish sauce, brown sugar, cumin, and beef broth until smooth and evenly combined. The mixture should look thick but pourable.
Slow-cook until fall-apart tender
  1. Place the beef in the Crockpot and pour the curry sauce over it, then add the bruised lemongrass. Make sure the roast is mostly submerged in sauce.
  2. Cook on Low for 7-8 hours until the beef is fall-apart tender. Check that it shreds easily when pressed with a fork.
Finish and serve
  1. Remove the lemongrass, then shred the beef in the sauce. Stir well so the shredded beef is fully coated and “drips” with curry broth.
  2. Stir in the lime juice and adjust seasoning with salt and pepper. Taste and refine the balance of tang, saltiness, and heat.
  3. Serve the coconut red curry drip beef over steamed rice and top with cilantro, lime wedges, and sliced red chili. Keep it hot so the sauce stays glossy and saucy.

Notes

For the most “drip” texture, shred the beef after cooking and stir thoroughly so the sauce coats every strand. Refrigerate leftovers up to 4 days; reheat gently until steaming. Freezing is yes—freeze in portions for up to 3 months and thaw in the fridge before reheating.
