Finish with cream and cheddar
- Stir in the heavy cream and return to a gentle simmer. Keep the heat gentle so the soup stays silky, about 2-3 minutes.
Melt cheddar and season
- Stir in the shredded cheddar until melted and smooth, then season with salt and pepper to taste. Adjust seasoning after the cheese fully melts.
Serve
- Ladle the soup into bowls and top with extra cheddar and chives. Serve hot for the best creamy texture.

Pro tip: Blend only about half the soup so you get a creamy base with visible cauliflower florets. Store leftovers in the refrigerator up to 4 days; reheat gently to prevent the cream from breaking. Freezing is not recommended because dairy can separate when thawed. For a lower-fat option, use half-and-half instead of heavy cream and reduce cheddar slightly while still melting thoroughly.
